Kanji (കഞ്ഞി)
Kanji is the most traditional food for Keralities. Kanji, being made with rice and water is a very simple and tasty food often enjoyed as dinner in most of the Kerala village homes.
Kanji, served along with pickle, a simple thoran and crushed roasted pappad with grated coconut, is ideal for those who are suffering from fever. It is recommended for sick people because it is a very light food which calms the stomach and is very digestive too.
How to prepare kerala style kanji?
Ingredients
Broken rice / Matta Rice : 1 cup
Water : 6 cups
Wash the rice properly with clean water. Put the rice along with water in a pressure cooker. Cook it in a high flame till 1st whistle comes and then turn to medium flame. Then wait till 4-5 whistle comes. After that switch off the flame and keep it for sometime. Open the pressure cooker after having the pressure released naturally.
The yummy, healthy Kanji is now ready. Strain the rice water from Kanji, add salt and serve it hot along with your favourite side dish. Rice water is also good for many of its properties. It has starch content and is rich in vitamins.
Ideal way to have Kanji : in a traditional clay bowl with handmade leaf spoon (as shown in the picture).
